Be the Example 

You never know who is watching

There are so many reasons why leading a healthy lifestyle is important.  Not only do you need to do it to take care of you, your body, your family, your health, and the the list could go on and on.....
But sometimes you never know who you are helping.  It may be someone who you would have never suspected would be inspired by you.  

Over the holidays, I was reminded that eyes both big and small are watching you.  Check out this picture of many of the little people in my life who were watching me and even joining in on my workouts.  



I am not a mommy and did not think little eyes were watching me as I got up each morning and did my workout, but those little eyes asked at the end of some holiday celebrations if we could work out together one night -- so a double day it was!! And then more little eyes joined in and we had our very own live class {ok not really but it was crowded}!! While I knew my family is watching and supporting me, I did not realize the little ones in the family were included in this and it was totally unexpected.  I was surprised and oh so excited -- I never thought I would inspire a group workout with the nieces and nephews.  It was so much fun.  It made me excited to seem them so excited and enthusiastic about exercise.  It does not need to be this terrible, scary, negative thing for them.  They can embrace it from the start -  if they see the adults in their life leading by example they will join in.  After all -- kids want nothing more than to grow up like the adults in their life and be just like mom/dad/auntie/uncle/grandma/grandpa, so why not show them how great it is to be a happy, healthy person! 

This group workout just reminded me that people are watching and you may not even realize who is watching, but you can't give up even when you feel like you are doing nothing.  Someone, somewhere knows the hard work you are putting in and is appreciating you!! It may be your family who is saying it loud and proud.  It might be your neighbor or friends cheering you on.  OR it just might be a random friend on Facebook who you didn't even think was watching, but is inspired by you.  You give them the push to keep on trying and keep going.  KEEP after it!! 


While sometimes I think, oh boy here I go again posting another workout picture that people are going to be annoyed with I remember that I may not know who is watching and they might just need a little inspiration to go on that extra walk today.  To know that someone else is struggling with the same things they are and to just keep trying.  Sometimes people will be loud and proud and cheer you on with shouts, but there will be silent cheerleaders who will cheer you on and be proud of you -- just not so loudly or boldly.  


So this is me -- even if you think I am not watching -- telling you that you are doing great!! Keep on going!! Be the example for someone in your life.  I am proud of you! Don't give up! Just keep pushing.  Be the best version of you that you can be for you  and all of the people in your life!! People are looking up to you and I know you will not let them down! :)

Who said you have to give up the food you love when you eat clean?! -- NOT ME!!

I LOVE pizza. If I could manage to eat it everyday, I would so be there! Fortunately I have found a way to work pizza into my healthy lifestyle and embrace it with clean eating.

Best part -- well there are a lot of great things about this but -- its quick, easy, and even kid approved!!

Ingredients:
  • Whole Wheat Tortilla
  • Pizza toppings of your choice
    • Great place to get in some veggies
  • 1/3 cup Shredded Cheese
  • Pizza Sauce

Directions:
  1. Cut up toppings you want.
  2. Place 1/2 of the cheese on half of the tortilla shell. Place other toppings on that and then put the rest of the cheese on top, fold tortilla in half.
  3. Heat skillet with medium heat.  
  4. Cook Tortilla on heat until cheese melts and is browned, make sure you flip it after a couple minutes.
  5. Remove from heat, cut with pizza cutter. 
  6. Dip slices into the pizza sauce! (We like to warm the pizza sauce in the microwave a bit, but that's optional) 
  7. Enjoy!!!


This recipe is my go to on the weekends when I am feeling like I am going to give into some pizza cravings but still want to stay on track.  Even the hubby will ask for it on the weekends!! :)

Crockpot Chicken Tacos


Okay, ready for a great busy day meal?!?! Stay tuned for this! 


I seriously LOVE using my crockpot to cook anythingggg.  If I know I am going to have a busy day, this recipe is my go to.  Crockpot meals are honestly something I love -- just so nice to come home and not have to think about making dinner, right?  This one is a house favorite and so easy.

There are so many options for this yummy recipe that I tried in my first challenge group.  

These are great served as a regular taco on either a soft whole wheat tortilla shell or even on a hard shell taco. They are great made into a quesadilla and it tastes wonderful served over a bed of lettuce! You can have some leftovers for lunch the next day.  Put it on a salad, sandwich, or use it as a dip with some chips!  Whatever way you decide to make it, you won't be disappointed!

Here it goes: 

Ingredients:
  • 1 lb. chicken breasts (I use boneless, skinless)
  • 1 can of organic black beans
  • 1 container of fresh salsa
  • 1 packet taco seasoning
  • 1/3 cup water (only use water if chicken is thawed)
  • 1/3 brick of cream cheese

Directions

  1. Put all ingredients except cream cheese in the crockpot 
  2. Cook on low for 5 - 6 hours or high for 3- 4 hours 
  3. You can use frozen or fresh chicken breasts. But remember, if you are using frozen, omit the water :) It makes it really runny if you use the water with the frozen chicken.
  4. *Shred the chicken before serving 
  5. 20 minutes before serving stir in the cream cheese until melted
  6.  Top with greek yogurt in place of sour cream, cheese, lettuce, or your favorite Mexican toppings
  7. ENJOY with tortilla shells or over tortilla chips
*I shred my chicken quickly and easily using two forks --- pulling the chicken apart.

Shakeology Chocolate

Do you have a sweet tooth?! --- but don't want to ruin all the hard work you have been doing in the kitchen and on your fitness? Then this is for you!

I am OVER THE MOON excited about this.  I love sweets and treats and have a hard time resisting them so finding this recipe is a lifesaver!! 

I have been working to cut sugar (*working* being the key word).  It's hard work but I am trying because it is so addictive and the more I eat the more I crave it! This means less sweets and treats in my meal plans but --- never fear ---- Shakeology chocolate to the rescue! 

I saw another coach mention that she was going to try this and I HAD to give it a whirl too!! 


The recipe is SO simple 
  • 1 scoop of Chocolate Shakeology 
  • 1 spoon of coconut oil melted
Here's what'cha do: 
  1. Stir it together
  2. Spread it on a sheet of wax paper
  3. Put into the freezer until solid
  4. Break or cut into chunks 
.....and enjoy!!

Just had myself a chocolate bar with zero guilt. :)  nom nom!! 



21 Day Fix/Fix Extreme Portions: 
1 spoon of coconut oil is a good fat 
1 shakeology serving is 1 red

*So I counted it as a red and as a spoon. 

You could add all sorts of deliciousness to this recipe if you wanted.  Think about adding in some peanut butter, PB2, or other nuts to give it some variety! 

I am so excited to stay on track and still have chocolate!

Seasoning Mixes

--> You can use them as a rub for roasting or grilling chicken, meat or fish, or use them to spice up ground chicken, turkey, or beef. You can also use these mixes to flavor rice, lentils, beans, quinoa, and vegetables!

**These mixes are all-you-can-eat for the 21 Day fix! --- SCORE! 


All-Purpose Seasoning

4 tsp. onion powder
2 tsp. garlic powder
2 tsp. mustard powder
1/4 tsp. dried thyme
1/4 tsp. ground black pepper
1 tsp. sea salt


Smoky Southwestern Seasoning

1 Tbsp. chili powder
2 tsp. ground cumin
1 tsp. coriander
1/2 tsp. onion powder
1/2 tsp. garlic powder
1/2 tsp. dried oregano
1/2 tsp smoked paprika
1 tsp. sea salt

--> This one is my favorite <--
**I also add: 
1/2 tsp. red pepper flakes
1/2 tsp. ground cayenne

I put this on chicken like its my job!!! Its my favorite way to cook chicken and then take it in my lunch with me for the next day.  I love it oven baked or grilled, and now that the weather is starting to get warm grilled will be on the menu more often.  I love the flavor or this spice and seriously panic when I  get low.  Every time I make it, I make it in a double batch because I am that obsessed and go through one batch wayyyy to fast!! 


Mediterranean Seasoning

4 Tbsp. dried parsley, crushed
4 tsp. dried onion flakes
2 tsp. dried basil, crushed
1 tsp. ground oregano
1 tsp. ground thyme
1 tsp. garlic powder
1 tsp. sea salt
1/4 tsp. ground black pepper

Finding my Confidence 

Are you ready for a story?---a personal story---well here it comes! 

When I started my health and fitness journey I just wanted to be happier with who I was physically. Little did I know that my transformation would be just as mental as it was physical!! 

I started getting into my health and fitness because I was -->sweating for the wedding<-- :D I mean, who doesn't want to look amazing on their wedding day?! I had gotten some results, but after the wedding I started using the 21 day fix and shakeology and this is when things changed for me! 

I was a total skeptic at first -- as I am the world's pickiest eater -- but I wanted to give it a whirl as I knew I needed to eat better.  So, I joined that first challenge group and BOOM, I was hooked.  Those ladies supported me, LOVED me, helped me grow, and taught me how important it is to take care of YOU and your body.  



During this first group I learned to love me, who I am and who I am still growing to be! I decided that the love I have for myself far exceeds the pressure I feel to look perfect. I work out because I love my body, not because I hate it. I will keep working out, because my goal is not defined by inches or a number in the scale. It's defined by the way I feel when I try on my clothes and how tall I stand when I walk out of the front door. For knowing I have done more for myself than many have or are. That is why I do this, and that is why I keep it up. For my future, and those not in it yet.

This week I put on a pair of those workout booty shorts -- you all know what I mean -- and realized that I was PROUD of the body I have been working so hard on. I NEVER thought I would be one of people who was able to wear these shorts.  I mean they look amazingggg on the ladies in the videos, but I did not think I would ever pull that off.  And here I am!! AND feeling great and confident in them....I mean I even wore them in PUBLIC once (so far).  

Do I feel perfect? No  
Will my body ever be perfect?  Absolutely not! --I don't think anyone is perfect!  
Am I always going to see a flaw? Yes, I am (as many of us are) my own biggest critic and I just remind myself that it is not about perfection.  It is about progress, it is about taking care of me for me. 

Working out and fueling my body right isn't just so I can look in the mirror and say "wow" or have others tell me how great I look {which is a bonus, not gonna lie} --- it is that satisfaction in knowing that I am important and worth the time and energy I am putting in to take care of my body for ME.  We only have one body and one life to live so you might as well take care of your body and make sure you live to do all those things you are always dreaming about!! 

I am happy to say that I have gained so much more than I ever expected both mentally and physically by being a part of a challenge group and then becoming a coach with the amazing beachbody company.

Flourless Brownie Muffins

I LOVE this recipe.  It was one of the first recipes I branched out to when I decided to embrace clean eating.  I was worried I would not be able to still enjoy my sweets and treats---BOY was I wrong.  Thank goodness for Beachbody having some delicious recipes for me to try! 

I looked at the ingredients and must admit, when I saw garbanzo beans I was thinking---Oh goodness, how will this taste delicious at all?!?  But once I made them I wanted to gobble them all down.  I had to control all my urges and tell myself that even though they are very healthy --- it is still all things in moderation and I shouldn't gobble up the whole pan myself without sharing with my hubs! 
*Bonus* It's 21 day fix (my favorite program) approved!

Prep Time: 20 min.
Cooking Time: 12 min.
Yield:12 servings, 1 cupcake each

Ingredients:

  • 1 (15 oz.) can chickpeas (garbanzo beans), drained, rinsed
  • 3 large eggs
  • ½ cup pure maple syrup
  • 1/3 cup unsweetened cocoa powder
  • 1 tsp. baking soda
  • 3 Tbsp. coconut oil, melted
  • 1 tsp. pure vanilla extract
  • 1/3 cup dark chocolate chips

Preparation:

  1. Preheat oven to 350° F.
  2. Prepare 12 muffin cups by lining with muffin papers or coating with nonstick cooking spray; set aside.
  3. Place chickpeas, eggs, maple syrup, cocoa powder, baking soda, coconut oil, and extract in blender or food processor; cover. Blend until smooth.
  4. Divide batter among 12 prepared muffin cups.
  5. Top each muffin with about four chocolate chips; push into batter.
  6. Bake for 10 to 12 minutes, or until toothpick inserted in center comes out clean.
  7. Cool completely and enjoy!

21 Day Fix Extreme Recipe: Chicken Fajitas 

I have been rocking Autumn Calabrese's new program, the 21 Day Fix Extreme, for few weeks now!  It has been great.  Now.....am I smiling my way through each and every workout?! --- NO.  Those workouts are tough and they kick my butt.  I am sweaty, sore, and gross by the end --- but I LOVE it. The good news is anytime your body is sore from a workout it means that it's challenging your body in a whole new way. 

One of the great things that comes with each fitness program is a nutrition guide.  This guide was full of some great recipes that I was ready to try!! Sometimes you just need a new one to throw into the rotation.  

If you are looking for a delicious new recipe --> look no further! Try this one out. I doubt you will be disappointed.   You can even save some that will make great leftovers too!

If you have non clean eaters in your family you can still do the chicken fajitas but just give everyone else shells to use instead of lettuce! 

This recipe makes 4 servings and 2 fajitas each 

Ingredients

  • 1 tsp chili powder 
  • 1/2 tsp sea salt 
  • 1/2 tsp ground cumin 
  • 1/2 tsp garlic powder 
  • 1/2 tsp olive oil, divided
  • 4 (5-6 oz) raw chicken breast, boneless, skinless, cut into 1/2 in strips 
  • 1 medium red or green red bell pepper, cut into thin strips 
  • 1 medium onion, thinly sliced 
  • 1 tbsp fresh lime juice 
  • 8 large romaine (or butter) lettuce leaves 
  • 1/2 medium avocado, thinly sliced 
  • 1 cup fresh salsa 
  • lime wedge for garnish optional 


Directions

  1. Combine chili powder, salt, cumin, garlic powder, and 1 tsp oil in large resealable plastic bag. 
  2. Add chicken, bell pepper, and onion; mix gently to coat. Refrigerate for 15 minutes.
  3. Heat remaining 1 tsp. oil in large nonstick skillet over medium-high heat. 
  4. Empty contents of bag into skilled; cook stirring frequently, for 5 to 6 minutes, or until chicken is cooked through. Remove from heat. Add lime juice.
  5. Evenly top lettuce leaves with chicken mixture, avocado and salsa. 
  6. Garnish with lime wedges if desired. 


Notes: 21 Day Fix Extreme Containers --> 2 Green, 1/2 purple, 1 red, 1/2 blue

Have you been wondering why you see me hashtag-ing those photos with Every Sweat Matters this month?!

Let me explain it to you

It means sweating for something BIGGER than myself, sweating for a cause, fighting for something worthwhile.

One of the many reasons I LOVE working with team Beachbody is the sense of community we all have. EVERYONE matters! We are one big family!
There is an amazing member of team Beachbody whose story is....well...awe-inspiring. The first time I heard her story I was in tears. It is amazing. I am talking about a fellow coach, whom I look up to in so many ways, named Katy Ursta. 


What is amazing about Katy is her story. Katy was just a normal person, teaching, raising her family and then forever her life was changed by a diagnosis. She was diagnosed with Stage IV Hodgkin's Lymphoma. Katy had to endure chemo every other week yet she still found a way to push play and workout. This wasn't so she could lose weight, this was to develop mental strength and clarity to fight this awful disease.

Please, take a few minutes and watch this VIDEO. This is Katy, her story matters, she gives hope to so many people and I want to do everything I can to help her campaign.
Oh YEAH----what does this have to do with #everysweatmatters again?!

Katy has been nominated for the Woman of the Year in Pittsburgh. This is a 10 week campaign where each nominee fundraises for 10 weeks to raise money for the LLS. The individual who raises the most money is the winner! I want to help her get there and so does our entire team! Every dollar raised goes towards families and individuals who are diagnosed with Leukemia or Lymphoma. It helps to pay their medical bills, it funds research to find a cure and better treatments and it truly does help people in need! The LLS has been a great support to Katy and her family and she is doing everything she can to return the favor!



What is my team doing?

During this time, we will be sweating, we will be working along her side to raise money to help improve research. We are on a quest to end cancer. It is time for people to stop losing their life to this awful disease. We will be working out with the hashtag #everysweatmatters to help raise awareness for her campaign!



What can you do to help?

Clean Granola Bars


I have been getting the munchies recently, but instead of grabbing for something not so healthy....I set out to make something delicious and clean to snack on.  

A friend had shared a granola recipe with me over the summer, and I knew this was the time to bust it out! 
I originally found this recipe over at thankyourbody.com and then modified it a bit to my liking. 

And let me tell you.....I will be making it time and time again.  So yummy and EASY! 

Here it is-->

Ingredients:
  • 3 cups of organic oatmeal (i used rolled oats)  
  • 1/2 cup organic peanut butter (or a substitute, like almond butter or sunflower seed butter)
  • 1/2 cup raw honey 
  • 1 cup seeds, nuts, or a combination (try pecans, almonds, pumpkin seeds, flax seeds, sunflower seeds, hemp hearts)
  • 1 cup organic, unsweetened and sulfur-free dried fruit (apricots, raisins, cranberries, pumpkin, strawberries, kiwi, dates, figs etc.)


Directions:

1. Pour the oats into a large mixing bowl.


2. Add the fruit, nuts, seeds etc.

3. In a separate bowl, combine the peanut butter (or substitute) and honey. Mix well, until combined and creamy.

4. Drizzle the peanut butter mixture over the oat mixture, and stir until combined.

5. Line a baking sheet with parchment paper, letting the edges of the paper extend beyond the sides of the pan.
--> okay, so we had no parchment paper when I made this, so I went with aluminum foil with a tiny bit of cooking spray (as seen in the picture)

6. Dump the granola mixture onto the parchment lined pan, and press the granola firmly down, in about a 1/2 inch thick layer. Smooth the top.

7. Chill the bars for 1/2 hour in the fridge.

8. Bake bars for 1/2 hour at 200 degrees (this step is optional, but will help your granola bars hold together and be less sticky. You can also cut them and put them in a food dehydrator over night, or just keep them chilled and eat them raw.)

9. Allow the bars to cool in the pan for 10 minutes, then lift them out using the edges of the parchment paper. Place on a cutting board and cut into bar shapes.

10. Reuse the parchment paper to wrap the finished bars. To keep them fresh, store in an airtight container if you won’t be using them soon.


Some good flavor combinations/suggestions:

Apricot-ginger: 1/2 cup dried apricots, 1/2 cup raisins, 1 tablespoon candied ginger, 1 teaspoon lime zest, 1 cup mixed seeds.

Traditional: 1/2 cup raisins, 1/2 cup golden raisins, 1/2 cup dried cranberries, 1/4 cup sunflower seeds, 1/4 cup almonds.

Tropical: 1/2 cup grated coconut, 1/4 cup dried pineapple, 1/4 cup dried mango, 1/2 cup sunflower seeds, 1/2 cup crushed macadamia nuts, 1/4 cup ground flax seed

Apple-Pie: 1/2 cup chopped dried apple, 1/2 cup raisins, 1/2 cup chopped pecans, 1/4 cup flax seed, 1/4 cup sunflower seeds, 1 teaspoon ground cinnamon.

Dessert bar: 1/2 cup dark chocolate chips, 1/2 cup grated coconut, 1/2 cup peanuts, 1/4 cup sunflower seeds, 1/4 cup flax seed.



**I must admit, when I make this recipe I leave out the dried fruit.  I am a consistency person when it comes to food and I just do not like the consistency of dried fruit.**

However, with just oats, nuts, and seeds this is still so DELICIOUS.

Spicy Baked Chicken Tenders

Are you in the mood for some delicious and healthy chicken tenders?! --- then you must try these, they are DELICIOUS.  This former picky eater was in chicken heaven when these made their way onto my plate! 

Check them out, you wont be disappointed, I'm sure of it.

Ingredients:
  • 2 large chicken breasts cut into tenders (about 3 oz each)
  • 1/4 cup whole wheat flour 
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 1 teaspoon chili powder
  • 2 egg whites **
  • 2 tablespoons hot sauce (I use Sriracha)
  • 1/4 cup whole wheat bread crumbs
Directions:
  1. Preheat oven to 375. 
  2. Spray cooking spray on a baking sheet lined with parchment paper or tin foil.
  3. Place flour, garlic powder, onion powder and chili powder on a plate and mix well
  4. Add egg whites and sriracha to another plate and mix well
  5. Pour bread crumbs into a third plate
  6. Dip the chicken in the flour, shake excess off. 
  7. Dip in egg white/hot sauce mixture. 
  8. Roll into bread crumbs. 
  9. Place on cookie sheet.
  10. When all the tenders are on the baking sheet, spray lightly with cooking spray 
  11. Place in the oven for about 25-30 minutes. 
  12. Optional: Turn the broiler on in on your oven for 1-2 minutes to get the tops browned before removing.

**The first time I made this recipe I was out of eggs, so I used a Vegan approved subsititon for eggs as follows: 1 tablespoon of milled flax seed with 3 tablespoons of water for each egg white you need
